    1 lb thin sliced skinless chicken breast
    2 Tbsp flour
    2 pats butter, divided
    2 Tbsp olive oil, divided
    3 Tbsp finely chopped shallots
    1/2 tsp dried thyme
    1/4 c. raspberry vinegar
    2 Tbsp seedless raspberry jam
    1/2 cup chicken broth
    1/2 cup whipping cream


Serve with rice and broccoli.


Melt half the butter and oil in slarge saute pan. Sprinkly breasts with salt and pepper, then dredge in flour and shake off any excess. Add to pan and saute til barely golden; turn and repeat. Remove to plate and repeat with remaining butter, oil and chicken. Remove all chicken and place in warm oven to keep warm. Remove all but 1 Tbsp fat from the pan, add shallots and stir, sauting till tender but not colored. Stir in thyme. Mix, vinegar, jam and broth. Whisk to break up jam. Add to pan and bring to a bubble. Stir and cook till it starts to thicken slightly, about 3-5 minutes. Strain solids out and pour sauce back into saute pan. Whisk in cream. Remove chicken from oven and add to pan with any juices. Turn pieces over to coat and let cook another 1-2 minutes. Garnish with fresh raspberries
