    1/2 cup each:
    Baby Lima
    Black-eyed Peas
    6C Chicken Broth
    2 onions, chopped
    1 TBS oil
    6-8 cloves of garlic
    7 oz. diced green chilies
    2-3 tsp ground cumin
    2 tsp dried oregano leaves
    1.5C Brown or Wild Rice (optional and not included in this nutrition info)
    1C White Corn
    1 tsp Cayenne pepper
    4C cooked and diced chicken
    1C Sour Cream
    3C Monterey Jack Cheese

    Sour Cream, cheese, green onions, diced tomatoes or cilantro to serve.


Day Before:
1) Soak Beans Overnight
1/2 cup each:
Baby Lima
Black-eyed Peas
Rinse & Cover with water bring to boil, then simmer 45-60 mins till tender
2.) Cook Rice (this is optional, this nutrition info does not include rice)

Day of:
1.) Combine beans and broth in large pot, simmer covered for 2 hrs.
2.) Saute onions in oil until golden.
3.) Add onions, garlic, green chilies, cumin, oregano, cayenne pepper and chicken to mixture. Simmer for another 30 mins.
4.) Add sour cream and jack cheese, heat until melted.

Serving Size: Makes appx. 12 servings.
