This soup is infinitely flexible. Change veggies. Change seasonings. In fact, I didn't list seasonings in the recipe although I used bouquet garni and dill for mine. Ingredients

    Bob's Red Mill Whole Grains and Beans (Dry), 737 gram(s)
    Leeks white and some of green, chopped, 2 cup
    Celery finely chopped, raw, 1.25 cup, diced
    Carrots finely chopped, raw, 1.25 cup, chopped
    Vegetable Broth, 4 cup
    Water, tap, 2 cups or more as needed

Tips

You can substitute onion for leek but leeks combine nicely with the legume-grain mixture of this dish. You can also add any other vegetables or switch it up to suit yourself!


Directions

Inspect beans and grains for dirt and foreign objects - like any dried bean product. I rinsed in fine mesh colander- don't rinse away your sesame seeds! Put in large pot with 5-6 cups water and/or broth mixture. Bring to boil. Reduce heat, cover, and simmer one hour. Add water as necessary to keep the soup "wet" (so it can absorb water and not stick to pan). All veggies were finely chopped in Ninja food processor. Add carrots and white part of leeks. Simmer and additional 20 minutes. Add celery and part of leeks and simmer an additional 10 minutes. Season. Cook until beans are as soft as you prefer.

Serving Size: Mine made 15 one-cup servings of thick soup.
