Thsi is an easy cheat I found one day while shopping. I always made my gumbo from scratch and i was tired of slaving over the stove for the perfect roux. this is healthier because there isn't as much oil as the from scratch way of roux making! yeah! Ingredients

Louisian Purchase Gumbo Mix
Onion
1 pound Earl Campbells Hot links (sausage)
1 pound Skinless boneless chicken breast
1 tblsp Tony Chachere's cajun spice
Directions
lightly oil deep stock pot with pam.
put in chopped onion and sliced hot links, simmer.
then add gumbo mix with 7 to 8 cups of water. bring to boil
then add chicken.
bring to boil once again and then let simmer for an hour.
Remove chicken breasts and tear with fork, put torn chicken back in and simmer for another hour.
If you loose too much water keep adding to make a thin gumbo or let it reduce for a thick gumbo....its usually personal prefrence of the cook
This makes a lot of 2 cup servings. about 12
