This was a delicious cake using a box mix. This was a delicious cake using a box mix.
Number of Servings: 16


    1 box butter pecan cake mix
    1/2 cup oil
    3 eggs
    1 cup water
    1 1/2 cup chopped pecans (toasted)

    For icing
    1/2 cup butter, melted in a skillet, then browned and cooled for 30 minutes
    1/4 cup light cream or milk
    1 pound icing sugar (confectioners sugar)


Could also add 1/4 cup brown sugar and 2 TBS butter to the pecans when roasting to make praline pecans. Chop well when cool.


Make cake according to directions, but fold in 1/2 cup chopped pecansinto battter just before putting into greased and floured pans.

Bake according to box directions.
When cool, make icing. Brown the butter, but do NOT let it burn. Let cool 30 minutes. Put butter, cream and sugar in bowl and mix on low for about 5 minutes. Then whip on high til light and fluffy. Add more milk if needed. Frost cake, then place the rest of the toasted pecans on the side of the cake to decorate.

Serving Size: Cut into 16 pieces (I serve 8, then freeze the other half)
