Ingredients


    1.5 cups whole wheat flour
    1/3 cup dark brown sugar, packed
    ½ cup rolled oats ( I like the whole ones for texture)
    2 tsp Natural Cane Sugar (Sugar in The Raw)
    1 tsp cinnamon
    Small pinch salt
    1/3 c water
    1/3 c milk
    1 ripe banana (I had mine in the freezer-thawed) 1
    1tbsp vegetable oil
    2 oragnic, golden delicious apples (they look reddish, sweet)
    2 eggs (You could probably sub egg beaters)
    1 tsp molasses
    1 tsp vanilla
    1/4 cup walnuts

Tips

Keep your eye on them and don't over-bake. Wheat flour makes denser baked goods to begin with so you don't want to over-cook! Be creative with your flavors, modify as you like! I wrapped some individually for the freezer. If you take them out the night before they are perfect for the morning. I would only leave out what you can eat in about 4 days, freeze the rest!


Directions

Preheat oven to 400 degrees. Grease muffin tins.

Combine all dry ingredients. Combine wet ingredients in a separate bowl (until eggs are beaten and banana is broken up). Chop apples into bite sized pieces (remove core). I left the skin on mine and they turned out well. Combine wet ingredients, dry ingredients and apples. Spoon into muffin tins (about 3/4 full- These muffins don't rise a whole lot). Bake for 15-20 minutes. Tops will be slightly browned and inside should be moist but solid. Enjoy! :D
