    1 1/3 cups all-purpose flour
    1 cup Quaker Oats (quick or old-fashioned, uncooked)
    1/4 cup brown sugar substitute or firmly packed brown sugar
    1/2 tsp. Lite Salt (optional)
    1/2 tsp. cinnamon
    1 cup skim milk
    1/4 cup egg substitute, or 2 egg whites, beaten
    3 T. canola oil
    1 cup fresh or frozen blueberries


Heat oven to 425 degrees. Spray 12 medium muffin cups with vegetable oil cooking spray or line with paper baking cups. Combine dry ingredients. Add milk, egg substitute and oil; stir just until dry ingredients are moistened. Fold in blueberries; fill prepared muffin cups 2/3 full. Bake 25-30 minutes, or until golden brown
