This meatloaf is full of colorful veggies. Yum! This meatloaf is full of colorful veggies. Yum!
Number of Servings: 10


    2.5 lbs. extra lean ground beef
    1 medium onion, diced
    2 large carrots, diced
    1 large rib celery, diced
    1 c. seasoned bread crumbs
    3 tbsp. ketchup
    2 large eggs
    1 tsp. Montreal steak spice
    1.5 tsp. garlic powder
    2 tsp. salt
    1 tsp. pepper
    1 can cream of mushroom soup (concentrated)


Mushroom soup can be swapped with cream of tomato if desired. It is equally delicious.


Combine meatloaf ingredients with your hands till flavorings are well incorporated.
Form meatloaf in large oven-proof casserole.
Top with 1 can of cream of mushroom soup.
Bake at 350 F. for 1 hour or till done.
