    2 whole large eggs
    2 egg whites
    1 cup chopped leeks (white and light green only)
    1 cup chopped tomato
    1 cup fresh chopped spinach


Sub other veggies such as cooked red peppers, eggplant, onions, as desired.


break eggs into bowl, add eggwhites, whip with a fork until mixed. Heat a pan to medium. Add oil. Add leeks and stir until soft. Add spinach and stir until just heated. Add tomatoes and stir. Add eggs and stir until cooked. Taste with salt, pepper and hot sauce as desired. Other spiced such as cumin, Italian spices, basil, etc can be added to taste.
