Ingredients

    1 cup Amish Friendship Starter
    1/3 cup melted, unsalted butter
    1/2 cup pure maple syrup
    2 eggs
    1 cup Bran Flakes

    1/2 cup unbleached white flour
    1/2 cup whole wheat white flour
    1/2 tsp baking soda
    2 tsp baking powder
    1/2 tsp salt
    2 tsp cinnamon
    1/2 tsp ground ginger
    1/4 tsp nutmeg

Tips

These muffins are not very sweet. Consider adding 1/2 cup of Splenda or a crumb topping if you prefer something sweeter.


Directions

Preheat oven to 375 F

Use electric mixer to blend wet ingredients with bran flakes while combining dry ingredients in larger, separate bowl. Dump wet mixture into dry and stir until just moistened. Spoon into lined muffin tin.

Bake 15-18 minutes.
