Ingredients

3 Egg Whites
1 Cup of Onions
1 Cup of Mushrooms
1 Cup of Red Capsicum
1 Cup of Zuccini
1 Cup of Tomatoes
Pinch of Salt
Pinch of Pepper
Directions
1. Slice all vegetables the way you would prefer them to be sliced/diced.
2. Add tbsp of extra light olive oil to a frying pan on medium heat.
3. Cook all vegetables until tender.
4. Remove vegetables and place to the side in a bowl.
5. Whisk egg whites thoroughly and add them to the frying pan.
6. Pour vegetables neatly on top of eggs whites.
7. Cook for approximately 5 minutes or until omelette is golden underneath.
8. Flip half of the omelette over the other half.
9. Then serve by itself or with some tossed rocket in balsamic vinegarette.
