Number of Servings: 13


    3 large zuchinni
    1 cup oatmeal
    1/2 cup egg whites
    1/2 cup fage greek yoghurt 0%
    4 scoops (servings) vanilla protein powder
    1/2 tsp baking powder
    1/4 tsp baking soda
    stevia (sweeten to taste)
    1 tsp ginger


Dymatize makes a butter nut toffee protein powder and that will makes the recipe taste very authentic. Vanilla is a little bland and could use some extract to improve the flavor.


throw all ingredients into your blender and whip
spray muffin tin
pour liquid in muffin tin
bake at 350 for about at least 30 min (could go longer)

These muffins are best once they have been chilled overnight. Expect that they will puff up in the oven and then fall a bit when removed from the oven.

Serving Size: makes 12 muffins or servings
