Ingredients

    Ground beef - about 1lb (drain with hot water once cooked)

    Olive Oil - 3 tbsp
    Onions, raw – 1/2 cup or half Lrg. Onion - diced
    Garlic, 3 cloves - finely diced
    Jalapeno Peppers - 2 diced
    Zucchini - 2 cups/2 whole - diced
    Green Bell pepper - 1/2 cup/1 whole - diced

    Red Ripe Tomatoes - 3 plum/roma - diced
    Cilantro, raw, 8 tbsp
    Yellow Sweet Corn - 1 can - drained
    Knorr Chicken Bouillon, 2 tsp
    Black Pepper - ½ Tsp.

Tips

add black pepper also - you can use any variation of veggies or ground turkey as well.


Directions

In a large deep frying pan...cook ground beef 10 minutes (med/high)

Drain with a strainer under hot water.

Rinse same pan...reheat pan (med/high)...and add olive oil. Add all diced veggies...except the tomatos, corn and cilantro (wait until the last 5 minutes of cooktime to add these)...once all the veggies are well cooked (10 min)...add the tomatos, corn (drained) cilantro and seasoning! Add the ground beef, thoroughly mixing together while bringing all ingrediants to a nice warm/hot temp.

Serve over brn rice, quinoa, barley =) its good with spinich =)
