    * Spinach, frozen, 2 packages
    * Egg Substitute, 4 tbsp
    * Low Fat Feta Cheese, 6 oz.
    * Parmesan Cheese, shredded, 2 tbsp
    * Onions, raw, 1 small chopped
    * Garlic, 2 clove minced
    * Olive Oil, 1 1tsp


Thaw spinach and drain thoroughly and place in a large bowl. Sautee onion and garlic in olive oil and add to spinach. Beat egg substitute with feta, add to spinach mixture and mix thoroughly. Pour mixture into a baking dish and sprinkle with Parmesan. Bake at 350F for about 45 minutes or until done.
