Introduction

Number of Servings: 4

Ingredients

    6 cups water
    1 cup brown lentils
    2 tablespoons extra virgin olive oil
    3/4 cup finely chopped carrot
    1/3 cup finely chopped onions
    1/3 cup finely chopped celery (about 1 stalk)
    1/4 cup sliced almonds
    1 teaspoon ground thyme
    1/2 teaspoon salt
    1/4 teaspoon freshly ground pepper
    1 large egg yoke
    1 whole large egg
    1 tablespoon lemon juice

Directions

Cook lentils to recipe on package
Cook onion, carrots and celery in frying pan on medium heat until transparent. Then add almonds and thyme and continue cooking additional 3-4 minutes.
Place mixture into a bowl add one egg yoke and refrigerate for one hour or until cool.
After cooling pulse in food processor 3-4 times.
Add 2 tablespoons flour and 1 whole egg, mix well and cook 3-5 minutes each side in oiled frying pan.

Serving Size: Makes 4 good sized burgers
