    2 C. WHITE WHOLE WHEAT FLOUR
    2 TBP. BAKING PODER
    2 TSP SALT
    1 C CRAISINS OR DRIED CRANBERRIES
    1 C CHOPPED PECANS
    ZEST OF 1 LG LEMON
    1/3 C CANOLA OIL
    1/3 C NONFAT PLAIN YOGURT
    4 EGGS
    1 C SKIM MILK
    2 C SHREDDED ZUCCHINI, PACKED

Directions

BLEND DRY INGREDIENTS ( EXCEPT ZUCCHINI) IN LARGE BOWL.
IN OTHER BOWL, BEAT TOGETHER EGGS, OIL,
MILK AND YOGURT. STIR INTO DRY INGREDIENTS.
GENTLY FOLD IN THE ZUCCHINI.
FILL MINI OR STANDARD MUFFIN TINS AND
BAKE AT 400 DEGREES TIL SPRINGS BACK
AT THE TOUCH.
MAKES 36 STANDARD OR 76 MINI MUFFINS
