Introduction

It's amazing but the pumpkin does the job of the oil and eggs required by the mix. The muffin dough is dense so the muffin tops are not smooth but the muffins are absolutely delicious. Ingredients

    Betty Crocker Super moist spice cake mix (whole box-not prepared)
    15 oz canned pumpkin (Not pumpkin pie filling)

Tips

Muffins freeze well and make a nutritious grab and go breakfast


Directions

Mix Cake mix and pumpkin together until all of cake mix is consumed. Spray muffin tins with cooking spray. Fill each cup 2/3 full. Bake at 350 degrees for 25 minutes.

Serving Size: Makes 12 regular size muffins or 6 jumbo muffins
