Introduction

A simple, yet pretty cookie. Nice on a Christmas cookie tray. Not what I'd call a healthy cookie, but it tastes good! A simple, yet pretty cookie. Nice on a Christmas cookie tray. Not what I'd call a healthy cookie, but it tastes good!

Ingredients

    60 g chocolate chips (2 oz)
    1 c flour (white)
    1 t baking powder
    1/4 c cocoa (good quality cocoa makes better cookies)
    1 c sugar
    2 large eggs
    1/4 butter, melted
    3/4 t peppermint extract
    1/2 c confectioner's sugar (icing sugar)

Directions

Melt chocolate in microwave, set aside.
Melt butter, whisk with sugar, eggs, and flavouring. Stir in melted chocolate. Add flour, baking powder, and cocoa (you can sift dry ingredients together before adding, but I didn't bother).
Cover and refrigerate at least 3 hours. Roll into tablespoon size balls and roll balls in icing sugar. Place 2 inches apart on cookie sheet (you can line sheet with parchment paper, I just used a no-stick pan)
Bake at 325 for about 15 minutes. Cool slightly on pan, then transfer to cooling rack.

Serving Size: makes 33 cookies
