    1 Tbs olive oil
    2 sliced portabella mushroom caps
    1/4 C chopped onion
    2 cloves of minced garlic
    1/2 Tbs dried parsley
    1/2 Tbs ground oregano
    1/2 tsp ground black pepper
    4 oz angel-hair pasta
    1 Lb. package of heat-and-serve frozen mussels
    1 Tbs grated parmesan cheese [optional]


You might want to sprinkle 1/2 Tbs grated parmesan cheese over the mushrooms and pasta before adding the mussels. The cheese adds about 15 calories per portion.

This dish works well with some crusty bread and a fresh green salad.


Heat 2 quarts of water with 1 tsp. salt in a pot large enough to cook 4 oz. of pasta.

While water is heating, bring the minced garlic and the olive olive oil to medium in a cast-iron pot.

As the oil heats, wash and slice the mushroom caps and chop 1/2 medium onion. Put the onion into the oil and garlic and sautee for 2-3 minutes until onion becomes translucent.

Add the mushroom slices, the parsley, oregano, and ground pepper, and cover.

Add the pasta to the water once it reaches a rolling boil. When the water resumes boiling, cook for 6 minutes.

Once the pasta is cooking, prepare the mussels according to the package directions -- e.g. 5-7 minutes in the microwave or 7 minutes in boiling water.

Drain pasta once it has cooked and divide into two pasta bowls. Cover the pasta with the seasoned mushrooms and onions.

Remove the mussels from their cooking bag, divide evenly over the pasta and mushrooms, and serve.

  • tried this last night using more butter and garlic to make a sauce with the mushrooms and onion was very good! I used red onion instead of white or yellow and garlic power instead of minced garlic as that is what I had on hand. - 2/13/19
