    Juice of 1 lime
    2 tbsp olive oil
    2 cloves garlic, minced
    1/2 tsp ground cumin
    1/2 fresh jalapeno, finely chopped
    1/4 cup fresh cilantro, chopped

    1 tbsp olive oil
    1 lb flank steak
    1 large yellow onion, sliced with the grain
    2 bell peppers (various colors) sliced into strips
    1 large tomato, chopped
    12 flour tortillas


Mix marinade ingredients. Coat steak with the marinade and let it sit at room temperature for an hour (longer in the fridge). Wipe off most of the marinade and sprinkle the steak with salt.

On high heat, warm a large cast iron pan for 1-2 minutes. Add the oil to the pan, heat for another minute. Add steak, fry on each side for 3 minutes to brown the steak (do not let burn). Remove from pan and let sit for 5 minutes.

While the meat is resting, cook the onions, bell peppers, and tomato, searing and stirring every minute or so. Cook until onions & peppers are crisp-tender, about 5-6 minutes.

Slice the meat against the grain into very thin slices. Arrange on platter with the vegetables.

Warm the tortillas in microwave (over a paper towel) for 20 seconds. Serve immediately.

Accompany with salsa, shredded cheese, shredded lettuce, sour cream, and guacamole (not included in nutritional information).
