    4 or 5 medium potatoes, peeled & diced
    2 stalks celery, diced
    2 carrots, diced
    1.5 - 2 cups frozen broccoli
    1-1.5 cups milk
    3 -4 cans chicken or vegetable broth
    1 whole onion
    2-3 cloves of garlic
    Cheddar cheese


Splash a tablespoon of olive oil into the bottom of a large sauce pan or small soup pot, chop onion and garlic and saute' until tender.

Add chicken broth, potatoes, carrots, celery and broccoli and bring to a slow boil. When potatoes are about half done, add the milk and boil until all veggies are tender.

Thicken with a couple of teaspoons of cornstarch (mix into COLD water and slowly pour into soup).
Add cheese to taste and melt into soup.

For flavoring I like to add salt, pepper, thyme and chives.
