Ingredients

    Portabella Mushrooms, 3 oz (about 1 mushroom)
    Olive Oil, 1 tbsp
    Pesto Sauce, 1 tbsp
    Cheddar or Colby Cheese, Low Fat shredded, 2 tbsp
    Mozzarella Cheese, Low Fat shredded, 1 tbsp
    Flour Tortilla, 8 inch
    Salt and Pepper to taste

Tips

To cut calories, use less cheese or a whole wheat tortilla and it will still be delicious!

No need to use additional oil or butter to brown the tortilla - whatever is left in the mushroom pan should be enough.


Directions

Chop the mushrooms into 1 inch chunks. Saute in olive oil, salt and pepper until browned (about 5 minutes). Spread pesto on the tortilla and top with cheese. Remove excess oil from mushrooms with paper towel and put on tortilla. Wrap and place on pan for about a minute on each side until browned.

Makes 1 serving (1 wrap)
