    1 zucchini, cubed
    1 yellow squash, cubed
    1 sweet potato, cubed
    1/2 eggplant, cubed
    1/2 butternut squash, cubed
    1 red pepper, chopped
    1 green pepper, chopped
    1 onion, chopped
    1 large carrot, chopped
    1 can of tomato paste
    1 can of diced tomatoes
    1 can of chickpeas, undrained
    2 cups of vegetable stock
    2 tsp of crushed red peppers
    2 tsp of cumin
    1 tsp of garam masala
    1 tsp of cinnamon
    1 tsp of nutmeg


Add all ingredients to a crock-pot. Cook on high for 4 hours, stirring frequently.
