Ingredients

    2 skinless chicken breasts - skin removed
    1/4 tsp basil
    1 tsp salt
    1 garlic clove
    7 cups of water, divided
    1 10oz can tomatoes and green chilies
    1 medium carrot
    3 celery stalks, chopped
    1 1/2 c uncooked small shell pasta - whole wheat

Directions

1. Combine chicken, basil, salt, garlic and 4 cups of water in a large saucepan. Bring to a boil, reduce heat and simmer, covered, 1 hour or until chicken is done. Remove chicken and cool.
2. Add half the tomatoes and green chilies along with carrot, celery, pasta and 3 cups more water. Taste for seasonings; add remaining tomatoes and green chilies for more spice. Simmer until vegetables are tender, about 30 minutes.
3. Chop or shred chicken into bite-size pieces. Return to the soup and cook until thoroughly heated.
Serves 6.
