Introduction

We've made krumkaker (Norwegian round cookies, a Christmas Eve tradition) the standard way, but a friend of mine requires a gluten-free, dairy-free diet and these seemed like a good candidate. Number of Servings: 30

Ingredients

    3 eggs
    1 cup sugar
    1/2 cup dairy-free butter substitute
    1 tsp cardamom
    1 3/4 cups gluten-free flour (add 1/2 to 1 tsp Xanthan Gum if desired)
    1 cup vanilla almond milk

Tips

These tasted just like the real thing!


Directions

Cream butter and sugar together. Stir in eggs until smooth and fluffy. Mix cardamom into flour; add flour alternately with milk, stirring well after each addition. Mix until smooth and let stand 20 minutes.

Bake as directed on krumkake iron. Remove and immediately shape around cone. Remove to wire rack when shape is set. Store in an air-tight container for up to a week.
