Ingredients

    Pearl Tapioca, 0.25 cup
    Granulated sugar, 0.125 cup
    Coconut milk, 1-2/3 cup (one 13.5 oz. can)
    Egg, fresh, beated
    vanilla extract, 1 tsp
    coconut extract, 1 tsp

Directions

Mix tapioca, sugar, milk, and egg in a large microwaveable bowl, let stand 5 minutes. Cook in microwave on high for 3 min.. Stir then cook 3 more min.. Continue this cycle until pudding is thick enough to coat spoon. Add extracts, stirring well. Yields: 8 - 1/3 cup servings.
