Ingredients

    8 oz Shirataki Noodles
    2 tbsp Vegetable Oil
    8oz Chicken Breast (boneless,
    cut into bit sized pieces)
    1/2 cup Green Onions, sliced on the diagonal
    1/2 cup Red and Yellow Peppers, Julienned
    1/2 cup Carrots, Julienned
    1/2 cup Pineapple Chunks
    (drained if using canned)
    1/3 cup Prepared Sweet & Sour
    Sauce

Directions

1. Prepare Shirataki noodles according to package directions. Cut the noodles
into 3-4 inch lengths.
2. In a non-stick skillet, toss noodles over medium high heat until dry . Set
aside. Heat oil in skillet. Add chicken, stir-fry for 2 minutes.
3. Add vegetables, stir-fry for 3 - 4 minutes. Stir in noodles then stir-fry for 2 minutes.
4. Add pineapple and sauce, simmer for 3 minutes. Then serve.
5. Variation: 1(14oz) package Tofu Firm, cut in cubes instead of chicken.
