Warm and delicious, and so sweet! Perfect side for a holiday meal, or as a pick-me-up on a cold day.

Number of Servings: 4


    1/2 cup dry quinoa
    2 small apples, cored and chopped
    1/4 cup raisins
    1/4 cup walnuts, chopped
    1 T olive oil
    1 t cinnamon
    1/2 t nutmeg


For a twist, stuff 1/2 cup into 1/2 of a roasted acorn squash (not included in nutritional info). Or for a more decadent, dessert-like side, replace oil with brandy or wine. YUM!!


1. Preheat oven to 350.

2. Combine quinoa with 1 cup water, bring to a boil. Once the quinoa is boiling, cover and reduce to a simmer. Simmer 12-15 minutes, until water is evaporated, then turn off burner but do not remove burner.

3. While quinoa is simmering, combine apples, raisins, and walnuts in a baking dish. Toss with 1/2 oil, cinnamon, and nutmeg. RESERVE THE REST. Place in oven and bake 10-12 minutes.

4. Once quinoa is prepared, combine quinoa with apple mixture. Add the rest of the oil and spices and stir very well. Bake an additional 12-15 minutes, serve warm.

Serving Size: Makes 4 servings of about 1/2 cup each
