Ingredients

    2 15 oz cans Chickpeas (Garbanzo Beans), drained & rinsed
    2 15 oz cans Black Beans, drained & rinsed
    4 Tbsp Mint Leaves
    1/2 cup Parsley
    1 cup Red Onions, finely diced
    3 Roma Tomatoes, finely diced
    1 tsp Garlic, crushed
    1/4 cup Olive Oil
    4 Tbsp Lemon juice, fresh squeezed
    1 tsp Salt (optional to reduce sodium)
    1/2 tsp Black Pepper, freshly ground

Tips

Remove the sodium and it'll take it down to 321.1 mg per serving.

The amount of onion, lemon juice, salt, parsley and mint is based on taste. Experiment and find the mixture that attuned to your palate. Enjoy!


Directions

Serving Size: Serves 8

Drain and rinse garbanzo and black beans & place in a large bowl. Finely chop onions, tomatoes, parsley and mint. Add to bowl and stir. Sprinkle the salt and pepper on the mixture and stir. Prepare the dressing in a small bowl: mix the crushed garlic, olive oil and lemon juice together, and pour it over the mixture. Stir and store in the refrigerator.
