Ingredients

    Zucchini, 3, sliced long way(Will be used as the noodles)
    Onions, raw, 1 large Quartered
    Onions, raw, .5 cup, chopped
    Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2" sliced
    Mushrooms, fresh, 1 cup, pieces or slices
    Hunt's Spaghetti Sauce Garlic&Herb
    Garlic, 1 cloves Minced
    Garlic, 2 cloves Minced
    Mrs. Dash (R) Garlic & Herb Seasoning Blend, 1 tsp Mozzarella Cheese, part skim milk, 4 oz
    Parmesan Cheese, grated, .25 cup
    Cottage Cheese, Nonfat, 2 cup
    Mozzarella Cheese, part skim milk, 4 oz
    Parmesan Cheese, grated, .25 cup
    Extra Virgin Olive Oil, Kirkland (1 tbsp=3tsp), 2 TBSP
    Extra Virgin Olive Oil, Kirkland (1 tbsp=3tsp), 1 TBSP Egg, fresh, 1 large

Tips

If veggies and sauce are not hot cook covered for 15 min then uncover top with cheese and cook uncovered 10-15 min.
If the mushrooms are chopped small they won't know there is no meat unless you tell them.


Directions

Place the zucchini, Onion Quartered and red pepper on a pan. Combine the 2 Tbsp oil and 2 garlic; toss over vegetables. Sprinkle with salt and pepper, bake, uncovered, at 400 degrees F for 15 minutes. Turn vegetables over. Bake 15 minutes longer. After cooking Separate zucchini into 3 portions and rest in half.
In a Sauce pan Heat 1 Tbsp oil and 1 garlic clove, add chopped onion sautÚ 2-min add mushroom, sautÚ another 2 min add Spaghetti Sauce. Let simmer while you prepare the cheese mixture.
Mix Mrs. Dash, Mozzarella 4 oz, Parmesan Cheese.25 cup, Cottage Cheese 2 cup, egg together.
When roasted veggies are ready layer as usual, use tongs or a fork as they will be hot. Couple Tbsp sauce just to keep moist and not stick, Zucchini(As Noodles), 1/3 of Sauce, Onion and red pepper, Cheese; Zucchini(As Noodles), 1/3 of Sauce, Onion and red pepper, Cheese, ; Zucchini(As Noodles), 1/3 of Sauce, Cheese, Top with Mozzarella Cheese, 4 oz Parmesan Cheese, grated, .25 cup. Since everything is cooked and the sauce is already hot you should just need to melt the cheese on top. Bake 10-15 min.
