Ingredients

    3lbs - Boneless Chicken Breast
    2lg - Carrotts
    6 - Green Onions
    1 1/2 cups - Celery
    1 large - Red Peppers
    3 cups - Bok Choy
    2 cups - Snow Peas
    1 package - Bean Sprouts
    2 containers - Water Chestnuts
    2 containers - Baby Corn
    1 cup - Chicken Broth
    2tbsp - Sugar Substitue
    2/3 cup - Soy Sauce
    1/2tsp - Ground Ginger
    2 - Glaric Gloves (medium) Crushed
    1/4 cup - Cornstarch
    1/3 cup - Water

Directions

Cook chicken in the microwave. When chicken is done cooking cut it into small chunks and put into the crockpot. Once you have chicken in pot stir in all the rest of the ingredients except for the cornstarch and water mix. Cover and cook on low for 6-8 hours.
Turn crockpot on high and combine cornstarch a small bowl stir until and water in small bowl stirring until mixture is smooth & cornstarch is disolved. Stir unto the slow cooker liquids. Keeping coverslightly agar to allow steam to escape, cook on high until thickened about 15- 30 minutes (this step can be done more quickly on the stovetop over medium heat). Serve over rice or chinese noodles
