Number of Servings: 12


    1C Oat Flour
    1C Oats
    3tsp Baking Powder
    1tsp Baking Soda
    1/2C Sugar
    2tsp Lemon Zest
    1 Egg
    1/3C Prune Puree
    3/4C 1% Milk
    1C Blueberries


Combine everything except the blueberries in a large mixing bowl and mix with a whisk. Donít use a mixer, as it will chop up the rolled oats. Cover the bowl and set it aside for 10 minutes to allow the batter to thicken. Once complete, fold in the blueberries with a spoon. Grease a muffin pan with baking spray and fill 2/3 full with batter.
Preheat oven to 400 degrees Fahrenheit and bake for 15-20 minutes until golden brown. Makes 12 regular size muffins.
