Introduction

An SCD friendly dish that pairs leftover turkey with leeks and bacon.

My husband adapted this from a Jamie Oliver recipe.

Number of Servings: 4

Ingredients

    4 slices of bacon (sugar and nitrite free), chopped
    1 small onion, chopped
    3 leeks, chopped
    1/2 a turkey breast, cut into bit sized pieces

Tips

For a lovely soup, you can put this into a food processor and add chicken broth.


Directions

Fry up bacon and onions. Once browned, add in leeks and a few tablespoons of water (if needed) and cover. Let cook for 30 minutes. Add turkey and cook until turkey has heated.
Add salt and pepper to taste.

Serving Size: Makes 4 one cup servings.
