    3/4 packed dark brown sugar
    1/2 c. butter, softened
    2 large eggs
    1/4 c. molasses
    2 c. whole wheat flour
    1 3/4 c. white flour plus more for roling
    2 t. ground ginger
    1 1/2 t. baking soda
    1/2 t ground cinnamon
    1/2 t. freshly grated nutmeg (or reg. ground)
    couple dashes of cayenne pepper
    1/2 t. salt


Cream sugar and butter together, Add eggs and molasses and mix until combined. Sift together the flour and spices. Add to the butter mixture and combine with a spoon or spatula.

Bake @ 350 degrees for 10 min.

Serving Size: one cookie -- makes about 41 cookies
