My boyfriend's yummy lentil mixture. My boyfriend's yummy lentil mixture.
Number of Servings: 4


    1 cup brown rice
    1 cup beef or vegetable stock
    2 cloves garlic
    1 cup lentils
    1.5 cups mixed vegetables
    1 cup canned tomatoes
    salt to taste


Make sure not to cook the rice completely before adding the remaining ingredients as it will be too soggy by the time the lentils are finished cooking!


Cook brown rice according to package using beef or vegetable stock for about 3/4 of the cooking time. Salt broth to taste.

Add lentils, garlic cloves, vegetables and canned tomatoes. Let simmer gently for about 30 minutes or until lentils are soft.

Serving Size: Makes 4, 1 cup servings
