Introduction
Can be altered to include anything you want to include. I was using this as a fridge clean-out meal in preparation for the "new year-back to the gym and eating change" time. :) Can be altered to include anything you want to include. Ingredients

Traditional omelet ingredients:
Eggs
Milk
ham
cheddar cheese
salt
pepper
and anything you want to add or subtract
Tips
(if you have a full metal pan, you could put this in the oven at 350 degrees for 15 minutes to finish it instead of flipping--fritatta!)
Directions
Heat skillet over med/low
Spray skillet with nonstick spray
whisk together eggs (you could use Egg Beaters) and milk
add salt and pepper to taste
add to pan and cover
After 2 mins, loosen sides of omelette with a rubber spatula and allow uncooked egg on top to run around edges. Add ham. Recover.
After 2 mins (approx) the egg should be almost set, shake the pan to loosen the omelet and turn over onto a plate (may want to do this over the sink), slide omelet back into the skillet to cook the other side. Recover.
Check omelet for doneness. If no longer runny, add cheese to top and remove from heat. Recover. Cut into 6-8 pieces and serve within 20 mins.
