Introduction

I revised recipe from the back of a Saltine cracker box. I used turkey sausage and gluten-free pasta. It almost comes out like a pasta e fagoli! Ingredients

    1 lb. Jennie-O Sweet or Hot Italian Sausage
    1 chopped onion
    2 cloves garlic, minced
    4 cups chicken broth
    1 cups water
    1 can cannellini beans, rinsed
    1 (14.5oz) can Italian-style stewed tomatoes
    1 1/2 cup elbow or bowtie pasta, uncooked

Directions

Brown sausage in a medium sized stock pot (spray with nonstick cooking spray). Add garlic & onion and sautee until onion is translucent (about 5 minutes).

Add chicken broth, water, beans, and stewed tomatoes. Bring to a boil. Add pasta and cook for 10 minutes or until pasta is al dente. Remove from heat, add spinach, stir, and cover. Let sit about 5-7 minutes. Sprinkle Parmesan cheese on top (if desired) and serve.
