    2 C. mashed potatoes
    2 egg yolks, lightly beaten
    4 TB. melted unsalted butter
    1/2 tsp. salt
    1/4 tsp. nutmeg
    1 TB. chopped chives
    Optional: paprika and parsley for garnish


Garlic powder can be used in place of the nutmeg.


In a large bowl, combine mashed potatoes, egg yolks, cooled butter, salt and nutmeg. Mix until blended; stir in chives.
Drop spoonfuls of mixture onto greased baking pan, swirling tops. Sprinkle with paprika, if desired.
Place under broiler for 5-7 minutes, or until lightly browned and cooked through. Transfer to serving dish and garnish with parsley.
