Introduction

Ingredients

    1 and 1/2 cup all purpose flour
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1/4 teaspoon cinnamon

    3/4 cup cane sugar or granulated sugar
    1/2 cup applesauce (equivalent of 4 ounces)
    1 large egg
    2 bananas, ripened, mashed
    1/2 cup dried cranberries (equivalent is Craisins)
    1 clementine, peeled and diced

Tips

Serving size is based on when you slice the bread in half the long way, then cut horizontally for a total of 20 slices.

If your bananas are not ripe, try roasting them! Preheat the oven to 350 degrees and placed unpeeled bananas on a cookie sheet. Bake for 11-15 minutes until they turn black and liquid starts seeping out. Allow bananas to cool down before using them.


Directions

Preheat oven to 350 degrees. Spray a 9x5 loaf pan with cooking spray and flour and set aside.

In a small bowl mix together the flour, baking powder, salt and cinnamon.

In a large bowl mix together the sugar, applesauce, egg, bananas, cranberries and clementine. Then mix in the flour from the small bowl and combine. Do not over mix!

Pour into prepared loaf pan and bake till a toothpick comes out clean in the center. This could take anywhere from 40-50 minutes as ovens vary. Allow bread to cool in pan for 5-10 minutes, then carefully take it out of the pan onto cooling rack. Once cooled, slice and serve.
