Number of Servings: 12


    3 Avocados
    1 package Guacamole mix (Concord Foods), Extra Spicy
    3 tbsp. Lemon Juice
    3 large cloves of Garlic
    1 can Rotel Tomatoes with green chilies, drained well
    4 Jalapeno Peppers, seeds removed & chopped finely
    3 Green Onions, sliced & chopped finely
    1 bag finely sliced Iceberg Lettuce


To make spicier, keep some of the jalapeno seeds and mince with the peppers.


Cut avocados in half, lengthwise and remove pit. Using a tablespoon, scoop out the insides and discard the outer shell. Mash well using a potato masher.
Add guacamole mix and lemon juice. Stir well.
Mince the garlic cloves and add to mixture.
Drain the tomatoes well then add to the avocado mixture.
Cut the tops off the jalapenos then slice in half. Remove the inner membranes and discard. Slice into thin strips, then mince the opposite way. Add to avocado mix.
Slice the green onions lengthwise, then slice thinly the opposite way so as to chop finely. Add to the avocado mix.
Stir very well to blend all flavors. Cover and refrigerate at least 1/2 hour.

On a small saucer, arrange approx. 1/2 cup finely sliced iceberg lettuce, then top with 1/2 cup of the guacamole. Serve with tortilla chips (not included in nutritional information).

Serving Size: Makes 12 servings, about 1/2 cup each.
