Number of Servings: 1

Ingredients

    1 can Rotel tomatoes (do not drain)
    1/2 c. cilantro leaves
    1/4 of an onion, sliced

    1-2 chicken breasts

    Black beans

Tips

-I start with a frozen chicken breast and it takes about 20 minutes to cook. Adjust accordingly.
-Serve with 2 T. of low fat sour cream (about 40 cal.) for a special treat


Directions

-Spray frying pan with cooking spray
-Sear each side of chicken briefly
-Add tomatoes, cilantro, and onions
-Cover and simmer until chicken in cooked through
-Remove chicken from the pan
-Place tomato mixture in blender and blend until smooth
-Heat beans in same pan while shredding chicken.
-Return sauce and chicken to pan to combine all ingredients

Serving Size: One chicken breast/person is a very ample portion
