My version of a protein muffin recipe. My version of a protein muffin recipe.

    8 egg whites, beaten to soft peaks
    1 cup oat flour
    1/2 cup cottage cheese, blenderized smooth
    4 scoops vanilla protein powder
    2 teaspoons baking powder
    2 tablespoons vanilla extract
    1/2 cup splenda granular
    3 teaspoons cinnamon
    1 1/3 cup finely grated carrots


Preheat oven to 375 degrees. Combine egg whites and all ingredients except carrots. Gently fold in carrots. Spoon batter into muffin cups prepared with nonstick cooking spray. Bake for 30 minutes or until golden brown.
