Introduction

Ingredients

    1 cup quinoa, rinsed well
    2 cups water, boiling
    1/2 tsp salt or Tony Chachere's
    1/2 cup Daiya Mozzarella shredded cheese

Tips

Also delicious with fresh mushrooms and garlic sauteed in the pot before adding the water, if you have the time and want to impress.


Directions

Cook the quinoa in the water (add salt) for 20 minutes on low simmer with lid on tightly. When quinoa is cooked and all water absorbed, add the truffle oil first and stir, then add the Daiya and stir well. Adjust saltiness and truffliness as needed.
