    1/2 yellow onion, chopped
    1 red bell pepper, chopped
    1 clove garlic, minced
    1 bay leaf
    2 T chopped fresh flat-leaf parsley
    2 tsp chopped fresh thyme
    2 pounds 100% grass-fed ground beef
    2 large yard eggs, lightly beaten
    3/4 cup Flax seed meal
    1 cup low-carb ketchup
    1 T Worcestershire Sauce
    2 tsp Celtic Sea Salt
    1/2 tsp ground black pepper


Preheat oven 350 degrees F. Sautee the onions, peppers, parsley, thyme, bay leaves, and garlic until soft and translucent. Let cool slightly. Beat eggs slightly and add to meat and flaxseed meal, salt, and pepper. Mix in the sauteed veggies by hand. Form into a long loaf on an oiled parchment paper lined baking sheet and coat top with the reserved ketchup. Bake for an hour and test for doneness. Depending on the shape of your loaf, it may need another 15 minutes.
