    1 lb Cherry Tomatoes - Quarted
    1 small Red Onion - Finely Sliced
    1 Clove Garlic - Chopped
    8 oz - Feta Cheese
    1 Tablespoon Chopped Basil
    1 Tablespoon Chopped Mint
    Salt and Peper to taste
    1 lb - Pene Pasta
    1 Cup - Black olives without pits
    1/3 Cup Olive Oil


1. Place the tomatores, onion, garlic, feta, oil, basil, mint and lemon zest in a large salad bowl. Toss well and season with salt and pepper. Let it sit for 30 minutes.

2. Cook the pasta in a large pot of salted boiling water until al dente. Drain well and cool under cold water. Draing again.

3. Add the pasta to the bowl with the tomatoe and cheese mixture. Add the olives and toss.

4. Garnish with basil and serve.
