Ingredients

    big sweet onion
    2 c diced carrots
    2 c celery
    2 c zuchinni
    1 c peas
    1 c corn
    4 c cabbage
    2 c mushrooms (or spinach)
    1 15 oz can diced tomatoes
    1 28 oz can crushed tomatioes w/no salt
    3 c no fat, low sodium chicken broth
    2 c lima beans
    splash of Worchestire sauce
    salt and pepper to taste
    Pam cooking spray

Directions

spray pot with Pam
sautee onions
add enough broth to cover
add celery, carrots
sautee
add rest of broth
simmer on medium for 15 minutes
add all other ingredients
cook on medium heat for 2-3 hours or until vegetables are tender
