Introduction

I've adapted a recipe from a book to make it healthier. I use Massel brand chicken stock which is totally vegetable derived, so not really chicken at all... Number of Servings: 3

Ingredients

    1 kg zucchini, thickly sliced
    1 onion, finely chopped
    2 garlic cloves, finely chopped
    2 red capsicum, deseeded and chopped
    5 tbsp hot chicken stock (massel brand is actually vegetable derived)
    4 tomatoes, chopped
    1 tbsp olive oil
    salt and cayenne pepper to taste

Tips

if you like things spicier (like I do) you can add fresh chili at step 2.


Directions

1. Preheat slow cooker.
2. Place the zucchini, onion, garlic and capsicum in the slow cooker and season to taste with salt and cayenne pepper.
3. Add the chicken stock and stir.
4. Add the chopped tomatoes to the top and drizlle with olive oil.
5. Cook on high for 2.5 hours until tender.

Serving Size: serves 6
