    1-2 Jalapenos - depending on peppers and to taste
    4 C Tomatillos - cut in half or quarters
    2 C chicken broth
    1 cup onion, chopped
    1 cup mushrooms, chopped
    1 cup cheese 2% or less
    3 T olive oil
    6 corn tortillas


In a pot boil diced tomatillas and jalapenos in broth until soft. Let cool and add to blender to make sause. Cook chicken in 1/2 tbsp of olive oil and shread. Then saute onions and mushrooms in 1/2 tbsp of olive oil. Set aside to cool. In a saute pan add the remining olive oil and heat. When oil is hot add one tortilla at a time. Cover tortilla in oil and cook for a few seconds. Move to plate and continue with tortillas. Make an assembly like with chicken, veggie mixture, cheese and tortillas. Fill Tortillas with chicken, veggie mixture, a pinch of cheese and roll up. Add to a nonfat cooking spray to baking dish and place each enchillad in pan. Finish off by pouring sause over enchillads and sprinkling with remaining cheese.
