I found this on the back of the Simply Kraft Low-Fat Cottage Cheese container. I found this on the back of the Simply Kraft Low-Fat Cottage Cheese container.
Number of Servings: 8


    2 Cups 2% Cottage Cheese
    10 oz package chopped, frozen spinach, drained very well
    1 Cup shredded cheese
    1 7 oz jar roasted red peppers, chopped and drained
    4 large eggs, lightly beaten
    1 tsp dried oregano leaves
    1/3 Cup grated Parmesan cheese


The actual recipe itself calls for shredded mozzarella cheese, but I had Cheddar/Jack in the house, so that is what I used and what the calories are figured for.


Preheat oven to 350 degrees. Mix all ingredients until well blended. Pour into a greased 9 inch pie plate. Bake 40 minutes or until center is set.
