Introduction

Chicken and Lentils packed with protein and fiber! Chicken and Lentils packed with protein and fiber!
Number of Servings: 4

Ingredients

    1 teas EVOO
    Cooking spray
    1 med onion, diced
    3/4 teas ground cumin (optional)
    3/4 pound ground chicken breast
    1 can (15 oz) lentils rinsed, drained or 2 cups cooked lentils
    3 TB fresh breadcrumbs
    1 large egg, beaten
    1/2 teas coarse salt
    1/2 teas black pepper
    4 english muffins, split toasted

Directions

heat 1 teaspon oil over medium-high heat, add onion and cook until lightly golden, 7 minutes. Add cuming, cook until frangrant (1 min) Transfer to large bowl, wipe out skillet with paper towel. To bowl add chicken, lentils, breadcrumbs, egg, salt and pepper. Mix with hands into 4 patties.
In skillet heat spray with PAM on medium heat. Add patties, cook until golden brown, 1-10 minutes, flipping once. Serve on Muffins with desired toppings.
